
We were introduced to by Ben & Jerry’s cookie dough. Those pieces of cookie dough are delicious and we always try to fish them out of the bin between the ice cream. Those bits of cookie dough aren’t very good for you, so we looked for a healthier alternative. This is a healthy cookie dough recipe.
You need this
- 1 cup soaked cashews
- a quarter cup of almond flour
- 1 tablespoon of almond butter
- 2 teaspoons vanilla extract
- 3 tablespoons of agave syrup
- plain chocolate chips
- a pinch of salt
This is how you make healthy cookie dough
First you will soak the cashews. You do this by placing them in a bowl in lukewarm water for two hours. So make sure you do this before you want to make them, because no one wants to wait. Furthermore, making healthy cookie dough is very simple. Put all ingredients (except the chocolate chips) in a blender. Blend the ingredients into a smooth batter. Be patient, it may take a while to get a smooth batter. So still waiting..
When the batter is smooth, stir in the chocolate chips, or small pieces of dark chocolate, and mix well. It’s ready: your healthy cookie dough! We’ll give you a little disclaimer: you have to eat the cookie dough within 4 to 5 days, but trust us: that won’t be a problem.
Variation tips:
You can eat the dough separately, but you can use it in many more ways! Eat it together with a scoop of ice cream (not very healthy) or use it as a layer between your brownies (again not very healthy either). On a healthy tour? You can also choose to actually bake them into cookies or eat them with some fruit and coconut yogurt! You can also make a kind of ‘sandwich’ by putting a ball of cookie dough between 2 slices of apple.
