I had chosen a delicious recipe for stuffed pumpkin, but I had almost no ingredients at home. Just the pumpkin and halloumi. I then had two options, get creative myself or go to the store.
Since the weather was inclement, I opted for a creative recipe with the ingredients I did have at home. The result was really delicious. A stuffed pumpkin is a nice dish to put on the table anyway.
What is Halloumi?
Halloumi, from Cyprus, is a hard cheese made from goat and sheep cheese, to which cow’s milk is added. Halloumi does not melt during baking. That is why this type of cheese is sometimes seen as a meat substitute.
Halloumi does contain a relatively high amount of salt and saturated fats, but also a large number of good nutrients, such as a lot of protein, calcium, zinc, iodine, selenium, vitamin A, folic acid, vitamin B2 and vitamin B12. Halloumi contains few carbohydrates.
You can buy halloumi at the specialty store, but also at supermarkets.

How do you make a tasty stuffed pumpkin?
Ingredients for two people:
- 1 bottle gourd
- 200 grams of spinach
- 1 red onion
- 3 cloves of garlic
- 1 beef tomato
- 8 dried tomatoes
- Halloumi
- Pumpkin seeds
- Olive oil
- Teaspoon ras al hanout
- Shiraca to taste
Preparation method:
Cut the pumpkin in half and remove the seeds and ribs. Preheat the oven to 200 degrees and grease the top (inside) of the pumpkin with olive oil. Put the pumpkin in the oven for at least half an hour. After half an hour, pierce the flesh to see if it is cooked.
During this half hour you can prepare the filling. You can finely chop all vegetables for this. First you heat a dash of olive oil in a pan and fry the onion and garlic in about 2 minutes. Then add the tomato and dried tomatoes. Finally, add the spinach. The filling is ready when the spinach has shrunk. Then cut the halloumi into small cubes.
When the pumpkin is cooked, spread the top with the ras al hanout and shiracca. Look at the shiracca how spicy you want it. Then you can put the filling in / on it. On top of that the halloumi. Put the whole thing in the oven for about 10 minutes. Top it off with the pumpkin seeds and possibly a big shovel of hummus on the side.
